My husband Daniel is a very talented cook. He is one of those people who does not like following a recipe. He likes to get the general idea of how something works and then runs with it to make it his own. This walnut sauce (a pesto) is his that I forced him to use my measuring scale so I could document how much of what goes in. That’s why instead of cups I’m using grams. If you don’t own a food scale, buy one!
This walnut sauce pairs nicely with spaghetti or linguine noodles. We add rotisserie chicken.
Walnut sauce ingredients:
128 grams walnuts
108 grams parmesan cheese
dried oregano 1/2 tsp
ground pepper 1/4 tsp
1.5 - 2 cloves of garlic
salt 1 tsp
1 tbs olive oil
1 cup whole milk
Large slice of bread (sour dough works great)
1/4 cup heavy whipping cream or just additional milk
Steps
Measure out your ingredients.
In a blender or food processor combine the garlic, parmesan cheese, walnuts, and seasoning in blender.
Take the slice of bread, chop it up into squares and place in a bowl. Pour 1 cup of whole milk onto the bread, allow the bread to soak it up a bit then add the bread and excess milk into the blender.
Blend until smoother.
Drizzle 1 tbs of olive oil into the blender and blend.
If it’s not creamy enough add more milk or heavy whipping cream. We did 1/4 cup of heavy whipping cream.
When the pesto is fully blended you will transfer it to a medium sized pot and cook on medium low until it is hot and the texture resembles a sauce.
Enjoy with meat of your choice and noodles!
